  • 2 1/2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup unsalted butter, softened

  • 2 cups sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup coconut milk

  • 1 cup shredded coconut

  • 1 cup raspberry preserves

Directions

  • Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans.
